- 2 lobster tails
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 cups seafood stock
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic; sauté until translucent.
- Add lobster tails, cook for 5 minutes, then remove and chop meat.
- Add seafood stock and tomato paste; simmer for 15 minutes.
- Blend the mixture until smooth, then return to pot.
- Stir in heavy cream, paprika, and chopped lobster meat.
- Season with salt and pepper; heat through before serving.
