Ingredients

  • 4 boneless chicken breasts
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook chicken for 5-7 minutes on each side until golden brown.
  5. Remove chicken and set aside.
  6. In the same skillet, add garlic, sun-dried tomatoes, spinach, and cook for 2 minutes.
  7. Add heavy cream and parmesan cheese, stir until combined.
  8. Place chicken back in the skillet and spoon sauce over the top.
  9. Bake in the oven for 20-25 minutes until chicken is cooked through.
  10. Serve hot and enjoy.
