Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 can black beans, drained
  • 1 cup corn
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add chicken and cook until browned.
  4. Stir in bell pepper, cumin, chili powder, salt, and cook for 2 minutes.
  5. Add rice and mix well.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes.
  8. Add black beans and corn, mix gently.
  9. Cover and cook for another 5 minutes.
  10. Remove from heat and let sit for 5 minutes.
  11. Garnish with cilantro before serving.
