Ingredients

- 2 cups of rice
- 1 cup of black beans
- 1 cup of corn
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped cilantro
- 1 avocado
- 1 lime
- 1 tsp of cumin
- 1 tsp of chili powder
- Salt to taste
Instructions
- Rinse the rice under cold water.
- Cook the rice according to package instructions.
- In a separate pot, heat the black beans and corn.
- Add diced tomatoes, cumin, and chili powder to the beans and corn.
- Mix cooked rice with the bean mixture.
- Chop cilantro and add to the mix.
- Dice avocado and squeeze lime over it.
- Serve rice mixture topped with avocado.
Notes
- Use fresh lime for the best flavor.
- Feel free to add cheese as a topping.
