Ingredients

  • 1 cup of corn
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1 avocado
  • 1 lime
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • Salt to taste

Instructions

  1. Rinse the rice under cold water.
  2. Cook the rice according to package instructions.
  3. In a separate pot, heat the black beans and corn.
  4. Add diced tomatoes, cumin, and chili powder to the beans and corn.
  5. Mix cooked rice with the bean mixture.
  6. Chop cilantro and add to the mix.
  7. Dice avocado and squeeze lime over it.
  8. Serve rice mixture topped with avocado.

  • Use fresh lime for the best flavor.
  • Feel free to add cheese as a topping.
