A festive dinner to celebrate New Year’s Eve with friends and family.
Ingredients

- 2 lbs of beef tenderloin
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup red wine
- 2 cups mashed potatoes
- 2 cups green beans, steamed
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, salt, black pepper, rosemary, and thyme.
- Place the beef in a roasting pan.
- Roast in the oven for about 25-30 minutes for medium-rare.
- Remove the beef and let it rest for 10 minutes.
- In the same pan, add red wine and scrape the bottom to make a sauce.
- Serve the sliced beef with mashed potatoes and green beans.

- Garnish with fresh herbs for presentation.
