Ingredients

  • 2 lbs of beef tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup red wine
  • 2 cups mashed potatoes
  • 2 cups green beans, steamed

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, salt, black pepper, rosemary, and thyme.
  3. Place the beef in a roasting pan.
  4. Roast in the oven for about 25-30 minutes for medium-rare.
  5. Remove the beef and let it rest for 10 minutes.
  6. In the same pan, add red wine and scrape the bottom to make a sauce.
  7. Serve the sliced beef with mashed potatoes and green beans.
