Description

A festive dinner to celebrate New Year’s Eve.


Ingredients

  • 2 lbs of beef tenderloin
  • 1 cup of red wine
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of rosemary, chopped
  • Salt and pepper to taste
  • 1 lb of asparagus
  • 1 lb of baby potatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, rosemary, salt, and pepper.
  3. Place the tenderloin in a roasting pan.
  4. Roast in the oven for about 25-30 minutes for medium-rare.
  5. Meanwhile, boil the baby potatoes until tender.
  6. Steam the asparagus until bright green.
  7. Remove the beef from the oven and let it rest for 10 minutes.
  8. Slice the beef and serve with potatoes and asparagus.
  9. Drizzle red wine reduction over the beef before serving.
