Ingredients

- 200g peppermint crisp chocolate
- 300ml heavy cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 200g crushed biscuits
- 50g butter, melted
Instructions
- Crush the biscuits into fine crumbs.
- Mix the crushed biscuits with melted butter.
- Press the mixture into the base of a serving dish.
- In a bowl, whip the cream until soft peaks form.
- Add sugar and vanilla extract to the cream and mix well.
- Chop the peppermint crisp chocolate into small pieces.
- Fold the chopped chocolate into the whipped cream.
- Spread the chocolate cream mixture over the biscuit base.
- Chill in the refrigerator for at least 2 hours.
- Serve chilled and enjoy.
