A refreshing peppermint poke cake perfect for the holidays.

- 1 box of white cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup crushed peppermint candies
- 1 cup sweetened condensed milk
- 1 cup whipped topping
- 1/2 cup crushed peppermint for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cake mix, water, oil, and eggs until smooth.
- Pour the batter into a greased 9×13 inch baking dish.
- Bake for 30 to 35 minutes or until a toothpick comes out clean.
- Remove from the oven and let cool for 10 minutes.
- Use the end of a wooden spoon to poke holes all over the cake.
- In a separate bowl, mix the sweetened condensed milk with crushed peppermint.
- Pour the mixture over the cake, ensuring it fills the holes.
- Refrigerate for at least 2 hours.
- Top with whipped topping and crushed peppermint before serving.
Notes
- Store any leftovers in the refrigerator.
- For a stronger peppermint flavor, add peppermint extract to the batter.
