Instructions
- Preheat your oven to 350°F (175°C).

- In another bowl, whisk together the almond milk, honey, coconut oil, eggs, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into a greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
