Delicious raspberry shortbread thumbprint cookies with a sweet jam filling.


Ingredients

  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour and salt, stirring until combined.
  5. Shape the dough into small balls and place them on a baking sheet.
  6. Make an indent in the center of each ball using your thumb.
  7. Fill the indent with raspberry jam.
  8. Bake for 15-20 minutes until the edges are lightly golden.
  9. Let cookies cool on a wire rack.
