Description
A hearty soup made with black-eyed peas and smoked meat.
Ingredients

- 1 cup black-eyed peas
- 4 cups chicken broth
- 1 cup diced ham
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Soak black-eyed peas overnight.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add diced ham and cook for a few minutes.
- Pour in chicken broth and add soaked black-eyed peas.
- Stir in thyme, paprika, salt, and pepper.
- Simmer for 1 hour or until peas are tender.
- Serve hot.
Notes
- Adjust seasoning to your taste.
- Top with green onions for garnish.
