A classic cookie recipe for Russian tea cakes, also known as snowballs or Mexican wedding cookies.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped nuts (walnuts or pecans)
- Additional powdered sugar for coating
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and powdered sugar until light and fluffy.
- Add vanilla extract and mix well.
- Gradually add flour and salt, mixing until combined.
- Stir in the chopped nuts.
- Shape the dough into 1-inch balls and place them on a baking sheet.
- Bake for 10-12 minutes or until the bottoms are lightly browned.
- Remove from the oven and let cool for a few minutes.
- Roll the warm cookies in powdered sugar.
- Let cool completely and roll in powdered sugar again before serving.
Notes
- Store in an airtight container to keep them fresh.
- You can use different nuts based on your preference.
