Ingredients

- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 3 egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon peppermint extract
- Green food coloring
- 1/2 cup butter
- 1 cup powdered sugar (for filling)
- 1 teaspoon peppermint extract (for filling)
Instructions
- Preheat the oven to 300°F (150°C).
- Sift almond flour and powdered sugar together.
- Whip egg whites until foamy, then gradually add granulated sugar and beat until stiff peaks form.
- Fold in the almond flour mixture and add peppermint extract and food coloring.
- Pipe small circles onto a baking sheet lined with parchment paper.
- Let the macarons sit for 30 minutes to form a skin.
- Bake for 15-20 minutes. Allow to cool.
- For filling, beat butter, powdered sugar, and peppermint extract until smooth.
- Pipe filling onto half of the macarons and sandwich with the other half.

- Let macarons cool completely before filling.
