A delicious combination of peppermint and chocolate with a crunchy twist from peanuts.
Ingredients

- 1 cup dark chocolate chips
- 1/2 cup peppermint extract
- 1 cup roasted peanuts
- 1 tablespoon coconut oil
Instructions
- Melt the dark chocolate chips and coconut oil in a microwave or double boiler.
- Stir in the peppermint extract until well combined.
- Add the roasted peanuts to the mixture and stir to coat.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Refrigerate until set, about 30 minutes.
