Ingredients

- 2 lbs chicken thighs
- 1 cup sweet chili sauce
- 1/2 cup soy sauce
- 1 cup bell peppers, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon sesame oil
Instructions
- Place chicken thighs in the slow cooker.
- In a bowl, mix sweet chili sauce, soy sauce, garlic, ginger, and sesame oil.
- Pour the sauce over the chicken.
- Add chopped bell peppers and onions.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken before serving.
