Ingredients

  • Rice paper wrappers – 10 pieces
  • Shredded carrots – 1 cup
  • Cucumber, julienned – 1 cup
  • Red bell pepper, sliced – 1 cup
  • Fresh mint leaves – 1/2 cup
  • Fresh cilantro – 1/2 cup
  • Cooked shrimp or tofu – 1 cup
  • Peanut butter – 1/2 cup
  • Soy sauce – 2 tablespoons
  • Lime juice – 2 tablespoons
  • Garlic, minced – 1 clove
  • Water – 1/4 cup

Instructions

  1. Prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, garlic, and water in a bowl.
  2. Soak rice paper wrappers in warm water until soft.
  3. Place a wrapper on a flat surface and layer with vegetables and protein.
  4. Fold the sides of the wrapper over the filling and roll tightly.
  5. Repeat with remaining wrappers and filling.
  6. Serve spring rolls with peanut sauce on the side.
