Ingredients
- Rice paper wrappers – 10 pieces
- Shredded carrots – 1 cup
- Cucumber, julienned – 1 cup
- Red bell pepper, sliced – 1 cup
- Fresh mint leaves – 1/2 cup
- Fresh cilantro – 1/2 cup
- Cooked shrimp or tofu – 1 cup
- Peanut butter – 1/2 cup
- Soy sauce – 2 tablespoons
- Lime juice – 2 tablespoons
- Garlic, minced – 1 clove
- Water – 1/4 cup
Instructions
- Prepare the peanut sauce by mixing peanut butter, soy sauce, lime juice, garlic, and water in a bowl.
- Soak rice paper wrappers in warm water until soft.
- Place a wrapper on a flat surface and layer with vegetables and protein.
- Fold the sides of the wrapper over the filling and roll tightly.
- Repeat with remaining wrappers and filling.
- Serve spring rolls with peanut sauce on the side.

- Store any leftovers in an airtight container in the refrigerator.
