- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup strawberries, pureed
- 1/2 cup pistachios, chopped
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream.
- Divide the batter in half; mix the strawberry puree into one half and the chopped pistachios into the other.
- Spoon the strawberry batter over the crust, then layer the pistachio batter on top.
- Bake for 50-60 minutes or until set.
- Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh strawberries for the best flavor.
- Allow the cheesecake to chill completely for a better texture.
- Garnish with additional strawberries and pistachios if desired.
