A special sushi recipe for Valentine’s Day.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 avocado, sliced
- 1 cucumber, julienned
- 8 ounces raw fish (such as tuna or salmon)
- Soy sauce for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small saucepan, heat rice vinegar, sugar, and salt until dissolved; let cool.
- Once rice is cooked, transfer to a bowl and mix in the vinegar mixture.
- Let the rice cool to room temperature.
- Place a sheet of nori on a bamboo mat.
- Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
- Arrange avocado, cucumber, and fish in a line across the rice.
- Roll the sushi tightly from the bottom up, using the mat to help.
- Slice the roll into 6-8 pieces and serve with soy sauce.
