Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 8 ounces raw fish (such as tuna or salmon)
  • Soy sauce for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved; let cool.
  4. Once rice is cooked, transfer to a bowl and mix in the vinegar mixture.
  5. Let the rice cool to room temperature.
  6. Place a sheet of nori on a bamboo mat.
  7. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  8. Arrange avocado, cucumber, and fish in a line across the rice.
  9. Roll the sushi tightly from the bottom up, using the mat to help.
  10. Slice the roll into 6-8 pieces and serve with soy sauce.
