Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cranberries
  • 1 cup of chopped pecans
  • 1 cup of diced celery
  • 1 cup of diced carrots
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • Salt to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. In a skillet, sauté celery and carrots until soft.
  6. Stir in cranberries, pecans, thyme, and rosemary.
  7. Add cooked quinoa to the skillet and mix well.
  8. Season with salt to taste.
  9. Serve warm.
