Description
A healthy Thanksgiving dish that everyone will enjoy.
Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cranberries
- 1 cup of chopped pecans
- 1 cup of diced celery
- 1 cup of diced carrots
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- Salt to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes.
- In a skillet, sauté celery and carrots until soft.
- Stir in cranberries, pecans, thyme, and rosemary.
- Add cooked quinoa to the skillet and mix well.
- Season with salt to taste.
- Serve warm.

- This dish can be made ahead of time and reheated.
- Feel free to add other vegetables.
- Great as a side dish or a main course.
