Ingredients

  • 1 tsp pumpkin spice
  • 1 cup pumpkin puree
  • 1 cup cream cheese frosting
  • Fall-themed sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, salt, and pumpkin spice.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the pumpkin puree.
  8. Line a cupcake pan with liners and fill each about 2/3 full with batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cupcakes cool completely before frosting.
  11. Top with cream cheese frosting and add fall-themed sprinkles.
