Ingredients

- 1 gallon water
- 1 cup kosher salt
- 1 cup brown sugar
- 1 tablespoon black peppercorns
- 1 tablespoon allspice berries
- 1 tablespoon thyme
- 1 lemon, sliced
- 4 cloves garlic, smashed
- 1 onion, quartered
Instructions
- In a large pot, combine water, salt, and brown sugar. Heat until dissolved.
- Add peppercorns, allspice, thyme, lemon, garlic, and onion. Simmer for 10 minutes.
- Remove from heat and let cool completely.
- Submerge the turkey in the brine, ensuring it’s fully covered.
- Brine in the refrigerator for 12 to 24 hours.
- Remove turkey, rinse with cold water, and pat dry before cooking.
