Ingredients

- 1 lb green beans
- 2 cups Brussels sprouts
- 3 carrots
- 1 red bell pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F.
- Trim the ends of the green beans and halve the Brussels sprouts.
- Peel and slice the carrots.
- Chop the red bell pepper.
- In a large bowl, combine all the vegetables.
- Drizzle with olive oil, salt, and pepper; toss to coat.
- Spread the vegetables on a baking sheet.
- Roast for 20-25 minutes, stirring halfway through.
- Remove from the oven and drizzle with lemon juice before serving.
Notes
- Feel free to add garlic for extra flavor.
- Adjust cooking time based on vegetable size.
