Ingredients

  • 1 whole duck, 5-6 lbs
  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • Salt to taste
  • Pepper to taste
  • 1 cup cranberry sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the duck with salt and pepper inside and out.
  3. Stuff the duck with oranges, onion, and half of the garlic.
  4. Rub the outside with thyme, rosemary, and remaining garlic.
  5. Place the duck on a roasting pan.
  6. Roast for 1.5 to 2 hours, basting occasionally.
  7. Check internal temperature; it should reach 165°F (74°C).
  8. Let the duck rest for 15 minutes before carving.
  9. Serve with cranberry sauce.
