Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh strawberries, pureed

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add vanilla and mix well.
  6. Add eggs one at a time, blending after each addition.
  7. Stir in sour cream and strawberry puree until combined.
  8. Pour filling into the crust and smooth the top.
  9. Bake for 60 minutes or until the center is set.
  10. Cool to room temperature, then refrigerate for at least 4 hours before serving.
