A rich and creamy dessert perfect for Valentine’s Day.
Ingredients

- 2 cups heavy cream
- 1 vanilla bean or 1 teaspoon vanilla extract
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and vanilla until just simmering.
- In a bowl, whisk together egg yolks and granulated sugar until light.
- Slowly add the hot cream to the egg mixture, whisking constantly.
- Strain the mixture into ramekins.
- Place ramekins in a baking dish and fill with water halfway up the sides.
- Bake for 30-40 minutes until set but still slightly jiggly.
- Cool and refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a torch or broiler.
Notes
- Use fresh vanilla for best flavor.
- Let it cool completely before refrigerating.
- Caramelize sugar just before serving for a crispy top.
