Ingredients

- 2 filet mignon steaks (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 1 cup red wine
- 1/2 cup beef broth
- Fresh rosemary for garnish
- 1 cup asparagus, trimmed
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Season the filet mignon with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the steaks for 3-4 minutes on each side.
- Add butter to the skillet and spoon it over the steaks as they cook.
- Transfer the skillet to the oven and roast for 6-8 minutes for medium-rare.
- Remove the steaks and let them rest.
- In the same skillet, add red wine and beef broth, scraping up any browned bits.
- Simmer until reduced by half.
- Blanch asparagus in boiling water for 2 minutes, then toss with lemon juice.
Notes
- For a more tender steak, let it rest after cooking.
- Pair with a side of mashed potatoes for a complete meal.
- Consider adding a dessert to finish the meal.
