A delightful vegan Christmas dinner that everyone will enjoy.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1 cup diced carrots
- 1 cup chopped bell peppers
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add carrots and bell peppers, sauté for 5 minutes.
- Add kale, walnuts, garlic powder, onion powder, salt, and pepper. Cook for another 5 minutes.
- Mix cooked quinoa with the vegetable mixture.
- Stir in dried cranberries.
- Serve warm.

- Adjust seasoning to your taste.
- Feel free to add other vegetables.
