- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let cool.
- In a large bowl, mix quinoa, black beans, corn, red bell pepper, avocado, lime juice, cumin, salt, and pepper.
- Serve chilled or at room temperature.
