Ingredients

  • 1 avocado, diced
  • 1 lime, juiced

  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let cool.
  5. In a large bowl, mix quinoa, black beans, corn, red bell pepper, avocado, lime juice, cumin, salt, and pepper.
  6. Serve chilled or at room temperature.
