Ingredients

  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 teaspoon of dried thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix butternut squash, olive oil, salt, pepper, and thyme.
  3. Spread the mixture on a baking sheet and roast for 25-30 minutes.
  4. In a large bowl, combine cooked quinoa, kale, cranberries, and pecans.
  5. Add the roasted butternut squash to the quinoa mixture and toss gently.
  6. Serve warm.
