Ingredients
Scale
- 2 cups of diced butternut squash
- 1 cup of chopped kale
- 1 cup of cooked quinoa
- 1/2 cup of cranberries
- 1/4 cup of pecans
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix butternut squash, olive oil, salt, pepper, and thyme.
- Spread the mixture on a baking sheet and roast for 25-30 minutes.
- In a large bowl, combine cooked quinoa, kale, cranberries, and pecans.
- Add the roasted butternut squash to the quinoa mixture and toss gently.
- Serve warm.
Notes
- You can substitute butternut squash with sweet potatoes.
- Add feta cheese for extra flavor.
- This dish can be made ahead of time and reheated.
